Cajun Prime Rib


  • 2 pounds prime rib roast
  • 1 onion, sliced thin
  • 1/8 cup salt
  • 1/8 cup black pepper
  • 1/8 cup garlic powder

***Seasoning Mix:***

  • 1/2 tablespoon salt PLUS
  • 1/2 teaspoon salt
  • 1/2 tablespoon white pepper PLUS
  • 1 teaspoon white pepper
  • 1/2 tablespoon fennel seeds PLUS
  • 1 teaspoon fennel seeds
  • 1/2 tablespoon black pepper PLUS
  • 1/4 teaspoon black pepper
  • 1 1/4 teaspoons dry mustard
  • 1 1/4 teaspoons ground cayenne pepper


  1. Remove fat layer off top of meat.
  2. Place ribs in a large roasting pan.
  3. Using a sharp knife, make several dozen punctures in the meat for seasoning to soak completely through
  4. Pour an even layer of black pepper generously over the top completely covering the ribs. Repeat using garlic powder, then salt. Each layer of seasoning should completely cover the preceding layer.
  5. Place the onions on top of the seasoned layer of the roast carefully as to not knock off the layers of seasoning.
  6. Place the fat cap back on top, covering all layers of seasoning and onions.
  7. Refrigerate for at least 24 hours.
  8. Preheat oven to 550 degrees.
  9. Bake ribs for approximately 35 minutes or until fat layer on top is dark brown and crispy.
  10. Remove from over and slightly cool.
  11. Refrigerate until well chilled, about 3 hours so the juices solidify and the steaks can be cooked rare.
  12. After chilled, remove fat cap and discard
  13. Using a large knife, scrape off onions and as much of the seasoning as possible and discard.
  14. Slice the ribs into 4 steaks and trim the surface of the meat from the two steaks that were slightly cooked on the outside from being in the oven.
  15. Season and cook your favorite way..
  16. To blacken the steaks, combine the ingredients of the seasoning mix thoroughly in a small bowl; you will have about 8 tablespoons.
  17. To blacken, use remainder of ingredients above, mixed together, and rub each steak with mixture.
  18. Preheat grill to high heat and place the steaks on the grill grate for approximately 2-3 minutes or until the underside starts to develop a black crust.
  19. Turn and repeat by cooking approximately 2-3 minutes or until underside starts to develop a black crust.
  20. Serve each steak while piping hot.
