Tomato and Basil Stuffed Chicken Breasts

Ingredients

  • 8-10 wood skewers soaked in water (about 30 minutes)
  • 4 boneless, skinless chicken breasts
  • ½ tsp. coarse salt
  • Freshly ground pepper
  • 2 garlic cloves, finely chopped
  • 1 tbsp. extra virgin olive oil
  • 12 fresh basil leaves
  • 2 beefsteak tomatoes

Directions

  1. Butterfly the chicken breasts by cutting them almost all the way in half horizontally, stop about ½ an inch before reaching the other side
  2. Open each breast and sprinkle with salt and pepper
  3. Coat both sides with oil and let stand for 30 minutes
  4. Pre-heat a grill or grill pan to medium hot
  5. Place a few pieces of basil on the bottoms of chicken breasts and top with a couple slices of tomatoes, then secure with skewers or toothpicks if you don’t have skewers
  6. Grill chicken breasts until golden brown on each side until no pink shows in the middle (about 15 minutes), only turning once
  7. Place on platter and remove skewers if you wish
