Steaks with Martini Marinade

Ingredients
  • 4 filet mignon steaks each about 8 ounces
  • 2 tablespoons gin
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon juice from a jar of green olives
  • grated zest of 1 lemon
  • 1/4 teaspoon freshly ground black pepper
  • 8 green olives stuffed with pimentos
  • 4 toothpicks
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 ounces blue cheese
Directions
  1. In a small bowl whisk all the ingredients except for the filet mignon steaks
  2. Place the filet mignon steaks in a resealable bag along with the ingredients, press air out of bag and seal tightly.
  3. Turn the bag several times, place in a bowl and refrigerate for 1-2 hours
  4. Skewer 2 olives onto each toothpick
  5. Remove steaks from bag and let liquid drip away. Let steaks sit at room temp for 20-30 minutes.
  6. Season with salt and pepper
  7. Grill on high heat with lid closed until cooked to your desired doneness.
  8. Crumble the blue cheese over the top and serve warm with skewer of olives poked in the middle of each steak.
