Spicy Sirloin Quesadillas

Ingredients
  • 4, 12 inch, flour tortillas
  • 3/4 cup grated cheddar cheese
  • 8 oz. sirloin steak, grilled to desired doneness and sliced thinly
  • 1-2 T. minced jalapeno
  • 1/4 cup salsa, add more for serving
  • Vegetable oil
  • Fresh cilantro sprigs for garnish
Directions
  1. Place two of the tortillas on a flat surface, and spread ½ cup of the cheddar evenly over them.
  2. Divide the steak in equal amounts for each tortilla and sprinkle jalapeno over tortillas.
  3. Add salsa to each tortilla and then add the remaining amount of cheese. Place the remaining tortillas on top of each on and press down.
  4. Heat a large sauté pan to high heat and add enough vegetable oil to coat pan; lower heat to medium.
  5. Cook each side until it is golden brown, around three minutes. Let cool for five minutes.
  6. Slice into 8-10 pieces and serve with salsa and cilantro.
Serves 2-4
