Spicy Grilled Lamb Chops With Chili-Cilantro Sauce

Ingredients

  • 4 (6oz) lamb loin chops
  • 2 tablespoons chopped fresh cilantro
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon ground cumin
  • 1 tablespoon olive oil
  • 1/4cup chopped shallots
  • 1 tablespoon chopped garlic
  • 1 1/2 cups dry red wine
  • 3/4 teaspoons garlic powder
  • 1 cups beef stock or canned beef broth
  • 2 tablespoons butter, cut into 1/2-inch pieces
  • 2 tablespoons chili powder

Instructions

  1. In a small mixing bowl, combine cilantro, oregano, cumin, 1 tablespoon chili powder, and garlic powder; mix well.
  2. Lightly coat lamb chops with seasoning mixture.
  3. Place lamb chops in glass baking dish, cover, and marinate in the refrigerator for at least 12 hours.
  4. In medium saucepan, heat 1 tablespoon olive oil over medium-high heat.
  5. Add garlic and shallots and sauté 4 minutes.
  6. Add red wine, beef stock, and the remaining portion of the chili powder.
  7. Boil at least 30 minutes until sauce is reduced to 3/4 cup.
  8. Remove sauce from heat and add butter 1 piece at a time, mixing thoroughly until melted after each piece.
  9. Preheat grill to medium-high heat.
  10. Grill lamb chops approximately 6 minutes per side or until desired doneness.
  11. Remove from grill and place on warmed platter.
  12. Spoon sauce over lamb chops and serve warm.
