Spice Rubbed Ribeye Kabobs with Salsa Verde

Ingredients
  • 2 teaspoons kosher salt
  • 1 teaspoon light brown sugar
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon prepared chili powder
  • 4 boneless ribeye steaks, about 12 ounces each and 1 to 1 /2 inches thick
  • Extra virgin olive oil
  • 12 wooden skewers, soaked in water for at least 30 minutes
Sauce
  • 1/2 cup tightly packed fresh basil leaves and tender stems
  • 1/2 cup tightly packed fresh Italian parsley leaves and tender stems
  • 2 anchovy fillets
  • 1 medium garlic clove
  • 6 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon finely chopped jalapeno chile pepper, without seeds
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper
Directions
  1. In a large bowl mix and rub the ingredients
  2. Cut ribeye steaks in chunks 1 to 1 1/2 inches thick
  3. Add the rib-eye chunks to the bowl of ingredients and evenly coat them
  4. Thread the ribeye chunks onto the skewers leaving a little room between each. Set aside for 20-30 minutes at room temp.
  5. Grill the skewers over direct heat with the lid closed until desired doneness.
Makes 4-6 servings
