Southern Barbecue Steak Burger

  • 3 pounds Heartland Steak's Certified Angus Beef® Steak Burger Meat
  • Salt and pepper to taste
  • 1/2 cup (125 ml) prepared barbecue sauce
  • 6 each Kaiser rolls
  • 1/2 stick (56 g) melted butter
  • 1 cup (250 ml) flour
  • 1 teaspoon (5 ml) salt
  • 1/8 teaspoon (.5 ml) pepper
  • 2 green tomatoes
  • 3 tablespoons (45 ml) melted butter
  • 1 recipe Sweet Onion Relish

Directions

  1. Season beef with salt and pepper , and portion into 8-ounce patties. Brush with barbecue sauce and grill to desired doneness. Brush rolls with butter and toast on grill.
  2. Combine flour, salt and pepper. Slice green tomatoes and dredge in flour mixture. Heat butter in skillet and fry green tomatoes until brown on both sides.
  3. To assemble, spread sweet onion relish on each roll and top with a burger and slice of fried green tomato.

Sweet Onion Relish

  • 5 tablespoons (75 ml) butter
  • 3 cups (750 ml) finely chopped sweet onions
  • 3/4 cup (175 ml) finely chopped leeks
  • 3/4 cup (175 ml) finely chopped red pepper
  • 2 tablespoons (30 ml) light brown sugar
  • 2 teaspoons (10 ml) dry mustard
  • 1/3 cup (75 ml) apple juice concentrate
  • 1/2 cup (125 ml) finely chopped scallions

Directions

  1. In skillet, melt butter; add onions, leeks, peppers, dry mustard, sugar and apple juice concentrate.
  2. Cook for about half hour, until onions are fully translucent and begin to brown.
  3. Add scallions after browning to retain some color.
  4. Serve immediately or refrigerate before use.

Yields 2 1/2 cups. Serves 6.
