Skirt Steak with Parsley-Garlic Sauce

Ingredients
  • 1 ½ lbs. skirt steak
  • Coarse salt and freshly ground black pepper
  • ¼ cup olive oil
  • 2 cloves of garlic
  • One bunch of flat-leaf parsley, no stems
  • 3 T. fresh oregano leaves
  • 3 T. white wine vinegar
  • 1/8 tsp. red pepper flakes
Directions
  • Season both sides of steak with salt and pepper
  • Heat 1T. olive oil in a large skillet over medium-high heat
  • For medium-rare steaks cook 5-8 minutes per side
  • When finished cooking, put steak on a cutting board and cover it with foil; let it sit 10 minutes
  • Slice meat thinly; against the grain
  • For sauce; in a food processor, pulse garlic until fine
  • Add parsley, oregano, vinegar, pepper flakes, rest of oil, 2 T. water, and ½ tsp. of salt.
  • Pulse together until herbs are finely chopped and serve with the steak.
Serves 4-5
