Skirt Steak Recipes

Ingredients
- One, 3 inch piece of ginger
- 2 large garlic cloves, minced
- 2 tsp. dark brown sugar
- 1/2 tsp. ground cinnamon
- 2 cinnamon sticks
- 1 pound skirt steak, or two 8 oz steaks
- 1/4 cup dry sherry
- 3 T. soy sauce
- 2 T. extra-virgin olive oil
- Salt and fresh ground pepper to taste
- Cilantro leaves, roughly chopped (optional)
Directions
- Peel half the ginger and grate finely to make 1 T. Thinly slice remaining ginger.
- In a non-reactive baking dish scatter the ginger, garlic, brown sugar, cinnamon, and cinnamon sticks.
- Cut steak against grain into 6 inch pieces and place in dish. Scatter with any remaining dry ingredients.
- Pour sherry, soy, and olive oil on steak and marinate, turning a few time, for 30 minutes or a few hours.
- Heat broiler. Season steak with salt and pepper and place steak in broiler pan.
- Broil until steak is brown and just charred, around 4 minutes. Turn, and broil for another 3 minutes for medium rare steak.
- When done, transfer steak to cutting board and cut into thin strips. Top with cilantro if desired.
Serves 3-4
