Sirloin Steak Fajitas con Salsa de Avocado from Heartland Steaks

Ingredients

  • 4 sirloin steaks, well-trimmed
  • 1 1/2 cup onion, sliced
  • 3/4 teaspoon cumin seed
  • 1 1/2 cup sliced mushrooms
  • 1 1/2 teaspoon oil
  • 1 1/2 cup nonfat yogurt
  • 2 teaspoon ground coriander
  • 2 teaspoon cilantro, minced
  • 1 cup salsa
  • 1 avocado, thinly sliced
  • 2/3 cup dry sherry
  • 4 jalapeno peppers, seeded and minced
  • 8 flour tortillas

Instructions

  1. In a large skillet combine onions, mushrooms, oil, and sherry and saute over medium-high heat, for 8 minutes.
  2. Cut steak into 1 inch strips and adds to skillet, cooking for 2 minutes more.
  3. Add jalapeno peppers, cumin, coriander, and cilantro, and cook 3 more minutes, stirring frequently.
  4. Place tortillas in oven on low to warm.
  5. Put salsa, avocado, and yogurt in separate small dishes to serve with meal.
  6. Serve fajita meat with salsa, avocado, and yogurt separate for a make-it-yourself meal!

Makes 4 servings
