Roasted Garlic Brisket with Onions

Ingredients

  • 3 pounds boneless beef brisket
  • 2 large onions, 1/2-inch thick slices
  • 2 tablespoons cornstarch
  • 2 cloves garlic, crushed
  • 1/4 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Brisket Instructions

  1. Preheat oven to 350 degrees.
  2. Place brisket in large roasting pan, fat side up.
  3. Evenly cover brisket with garlic, salt, and pepper.
  4. Place onions on top of brisket.
  5. Place brisket in oven for approximately 30 minutes, or until onions are brown on top.
  6. Add 1 cup hot water to bottom of roasting pan.
  7. Securely cover pan with lid or aluminum foil.
  8. Reduce heat to 325 F and continue cooking for 1 hour or until brisket is tender.

Gravy Instructions

  1. Skim fat from pan juices.
  2. Carefully pour skimmed juices into a medium saucepan.
  3. Mix cornstarch with ¼ cup water and add cornstarch mixture to saucepan.
  4. Bring gravy to a boil over medium heat, stirring frequently.
  5. Serve brisket with gravy and onions
