Roast Prime Rib with Winter Vegetables

Ingredients

  • 1 prime rib roast (bone in) (6 lbs.)
  • 5 garlic cloves, smashed
  • 1/2 cup horseradish
  • 2 fresh rosemary sprigs
  • 4 fresh thyme sprigs
  • 1/2 cup sea salt
  • 1/4 cup fresh ground pepper
  • 1/2 cup extra virgin olive oil
  • 2 carrots cut into chunks
  • 1 red onion, halved
  • 1 yellow onion, halved
  • 5 red potatoes, halved
  • 1 head of garlic, halved

Directions

  1. Pre-heat the oven to 350 degrees with the bone side of the roast on the bottom.
  2. In a bowl, mash together the garlic, horseradish, rosemary leaves, thyme leaves, salt, pepper, and olive oil. Rub this mixture all over the roast.
  3. Place vegetables around the roast and drizzle liberally with the olive oil.
  4. Bake roast 1 1/2 - 2 hours for medium rare, or 20 minutes per pound (meat thermometer should read 125 degrees for medium rare).
  5. Remove roast from oven and place on a carving board, let rest for 20 minutes before you start to carve.
  6. 6. Remove vegetables and place on platter.
