Prime Rib Roast with Thyme Au Jus

Ingredients
  • 1 bone-in prime rib roast, around 7 lbs.
  • 8 cloves of garlic, thinly sliced
  • Salt and coarsely ground pepper to taste
  • 2 cups red wine
  • 4 cups beef stock
  • 1 T. chopped fresh thyme leaves
Directions
  1. A half hour before roasting, take roast out of fridge and let it come to room temperature. Preheat the oven to 350 degrees.
  2. Slice small slits all over the prime rib and fill each one with a garlic slice. Season with salt and pepper.
  3. Place meat on a rack inside a roasting pan and roast for about 2 hours for medium-rare. Meat thermometer should read 135 degrees. Take meat out and set on platter; cover with foil.
  4. Place the roasting pan on top of the stove over two burners that are set to high.
  5. Add wine and cook on high until liquid is reduced; scrape the bottom of pan with a wooden spoon.
  6. Add stock and cook until reduced by half; then whisk in the thyme and season with salt and pepper.
  7. Slice meat and serve with sauce
