Poblano Steak Sauce

Try this delicious mild chile pepper steak sauce recipe for your Certified Angus Beef®.

Ingredients

  • 1 pound (454 gm) plum tomatoes, cored and halved
  • 2 pounds (196 g) poblano peppers, washed and cleaned, oven roasted, peeled, seeded and diced
  • 3 tablespoons (45 ml) olive oil for roasting peppers and tomatoes
  • 6 tablespoons (90 ml) tomato puree
  • 3/4 ounces (21 g) garlic, peeled and oven roasted
  • 5 cups (1.2 L) mayonnaise
  • 4 tablespoons (10 g) short-cut chives
  • 1/2 teaspoon (3 g) salt
  • 1/2 teaspoon (3 g) freshly cracked white pepper
  • 4 teaspoons (10 g) fresh-snipped oregano
  • 10 drops Tabasco sauce
  • 1/3 teaspoon (1.66 g) Worcestershire sauce

Directions

  1. Rub tomatoes and peppers with olive oil and oven roast.
  2. Peel, seed and dice peppers, and combine with roasted tomatoes, tomato puree and garlic.
  3. Blend in blender until pureed.
  4. Remove and combine with mayonnaise.
  5. Adjust seasoning with remaining ingredients.
  6. Chill and serve with your favorite steak.
