Pistachio Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 sheets of heavy duty foil, sprayed with nonstick cooking spray
  • 1 T. olive oil
  • 1/4 tsp. paprika
  • 1/2 cup finely chopped pistachio nuts
  • 2 T. finely chopped green onion

Directions

  1. Preheat oven to 375 degrees and place each chicken breasts on a sheet of foil
  2. Brush chicken with oil and sprinkle paprika on top.
  3. Double fold sides to seal chicken and leave some space for air circulation. Place foil packets on baking sheet.
  4. Bake for 25 minutes, and then remove from oven. Open one end of foil and sprinkle chicken with nuts and green onions.
  5. Leave foil open and put back into oven. Bake for 5 minutes or until chicken is white in the center.
  6. Place chicken on a serving plate and serve immediately.
