Mustard Glazed Lamb Chops with Toasted Pine Nuts

Ingredients

  • 4 (6oz) Lamb Loin Chops
  • 1/4 cup Dijon mustard
  • 1/4 cup extra virgin olive oil
  • 1/4 cup grated Parmesan
  • 1/2 tsp. salt
  • 1/4 tsp. fresh ground black pepper

Directions

  1. Mix glaze ingredients in a medium sized bowl.
  2. Brush lamb chops on both sides with prepared glaze. Allow to sit at room temperature 20-30 minutes with glaze before grilling.
  3. In a skillet over medium heat, toss pine nuts until they reach a golden brown color. Move nuts to cutting board and chop roughly. In a separate bowl, mix nuts with parsley and cheese.
  4. Grill glazed lamb chops over direct medium heat, making sure to keep grill covered as much as possible. Cook until you have lightly charred the surface of the lamb chop, and until your preferred doneness. Turn the meat once or twice in order to achieve even cooking.
  5. Serve warm with pine nut mix scattered on top.
