Mt. Olympus Lamb Chops

Ingredients
  • 4 (6oz) Lamb Chops
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup fresh mint-chopped
  • 3 cloves garlic- minced
  • 1 tsp salt
  • 1 tsp black pepper
Directions

Whisk together the olive oil, vinegar, mint, garlic, salt and pepper. Put in a food storage bag or sealable food container and add Lamb Chops. Let marinade for a minimum of two hours (best if left to marinade overnight).

Remove chops from the bag and either place on hot grill or under a hot broiler. Cook on both sides for about 5 minutes for Medium Rare. Remove and serve hot.
