- 6 8oz. Certified Angus Beef® Top Sirloin Steaks
- 1/4 cup olive oil
- 1/4 cup dry red wine
- 2 cloves garlic, minced
- 1 teaspoon coarse ground pepper
- 1/2 teaspoon salt
- 1/2 teaspoon Dijon-style mustard
- 1/4 cup thinly sliced green onion
- 1/4 cup crumbled blue cheese
- 2 tablespoons soft goat cheese (chevre)
- 1 clove garlic, minced
Directions
Place sirloins in a plastic bag set in a shallow dish. For steak marinade, stir together olive oil, red wine, the 2 cloves minced garlic, pepper, salt, and mustard. Pour over steak. Close bag. Marinate steaks in the refrigerator for 6 to 24 hours, turning bag occasionally.
Drain marinade from steak, discarding the marinade. Grill marinated sirloin steak on the rack of an uncovered grill directly over medium coals to desired doneness, turning once halfway through. (Allow 8 to 12 minutes for medium rare steak and 12 to 15 minutes for medium steak temperatures.)
Meanwhile, in a small bowl combine green onion, blue cheese, goat cheese, and garlic.
Transfer grilled steaks to serving platter. Dollop some of the blue cheese mixture over each sirloin steak. To serve, thinly slice meat across the grain. Serve remaining blue cheese mixture in a small bowl on the table for your guests to pass.
