Manicotti Beef Florentine

  • 8-10 manicotti shells
  • 1 lb. Heartland Steak's Certified Angus Beef® Steak Burger Meat
  • 1 (10 oz.) package frozen chopped spinach, thawed
  • 2 tsp. dried Italian seasoning
  • 1 (15 oz.) container low-fat ricotta cheese
  • 1 (14 oz.) jar spaghetti sauce
  • 3/4 cup (3 oz.) shredded part-skim mozzarella cheese

Directions

  1. Cook shells according to package directions; rinse, drain and cool in a single layer on waxed paper. Cover with moist paper towels.
  2. Meanwhile, brown beef in skillet over medium-high heat, breaking into small pieces; drain well.
  3. Drain thawed spinach well; place on paper towels and squeeze until almost dry.
  4. In a bowl, combine spinach with browned beef, Italian seasoning, and ricotta cheese; mix until well blended. Stuff each shell with filling.
  5. Pour 3/4 cup spaghetti sauce into a lightly greased 2 quart rectangular baking dish. Arrange stuffed shells over sauce. Pour remaining sauce over shells. (May be baked at this time or place in refrigerator for several hours and baked later.)
  6. Cover and bake at 350? F for 20-25 minutes or until thoroughly heated. Uncover; sprinkle with mozzarella cheese and bake an additional 5 minutes or until cheese melts. Serve.
  7. Total preparation time: 50 to 60 minutes. Serves 4-6
