Loving Lamb on a stick (BBQ)

Ingredients

  • Lamb loin (500gms)
  • Sea salt (1 tsp)
  • Bulb of garlic (1 peeled)
  • Crushed garlic cloves (4)
  • Fine quality olive oil (1/4 cup)
  • Regular olive oil (1/4 cup)
  • Cinnamon (1 tsp)
  • Lemon juice (2 tbsp)
  • Lemon juice (1/4 cup)
  • Paprika (1 tsp)
  • Wooden skewers soaked in water (30 Minutes)

Directions

  1. Trim off fat from lamb and cut into bite size pieces
  2. Mix olive oil, lemon juice, crushed garlic, cinnamon, and paprika in a large non-reactive bowl, mix together thoroughly, and add lamb
  3. Fully coat meat, cover it, and then refrigerate for a minimum of two hours or allow it to refrigerate over night.
  4. Fully Peal garlic, add lemon juice and start to blend, and stop as needed to push down garlic from sides of blender
  5. Continue to blend after adding salt, and then add olive oil in a slow stream while continuing to blend
  6. Refrigerate until needed
  7. Heat barbeque and skewer the lamb pieces
  8. Continue to barbeque lamb pieces until desired doneness
  9. * Best when served with a nice sliced baguette of bread and a good salad
