Lobster Tail with Zesty Almond Crust

Ingredients

  • 4 lobster tail
  • 3 eggs
  • 3/4 cup vegetable oil
  • 4 ounces fresh grated bread crumbs
  • 1 1/2 ounce thyme
  • 4 ounces flour
  • 5 ounces sliced almonds
  • 1 lemon
  • Salt & Pepper

Instructions

  1. Using a sharp knife, make an incision from the tail to the head of the lobster.
  2. Without cutting all the way to the button, remove meat from lobster shell.
  3. Using three different plates for coating with batter. One plate should have flour, one with almond, bread crumbs, and thyme, and the other with beaten eggs, salt, and pepper.
  4. Dip the top portion of the lobster generously in the flour, then egg mixture, and then into the almond mixture, creating a breading.
  5. Preheat oven to 500 degrees.
  6. Preheat oven to 495 degrees.
  7. Using a large skillet, heat oil on medium and fry lobsters for 1 to 2 minutes on each side, making sure the almonds do not burn.
  8. Place fried lobster on warmed platter and squeeze lemon juice over top of entire plate
