Lobster Redskin Mashed Potatoes

Ingredients
  • 1 8-ounce frozen uncooked lobster tail, thawed
  • 1/3 cupmilk
  • 2 teaspoons chopped fresh tarragon
  • 1 pound red skin potatoes, peeled or unpeeled, cut into quarters
  • 2 tablespoons butter
Instructions
  1. Cook lobster in large pot of boiling salted water until for about 7 minutes. Transfer lobster from pot to prep surface and allow to cool. Do Not Discard Water (it will be used later).
  2. Remove lobster meat from shell and cut into 1 to 1.5 inch pieces. In a separate saucepan, bring 1/3 cup milk to simmer and add lobster meat and tarragon; cover and set aside.
  3. Bring the pot of water that the lobster was boiled in back to a boil. Add the red skin potatoes and boil until they are tender, about 20 minutes. Drain potatoes; return to pot and mash. Add butter and lobster mixture to mashed potatoes and mix until all ingredients are blended. Salt and pepper to taste.
