Lemony Pepper Prime Rib Roast and Vegetables

Ingredients
  • 2 1/2 lbs. red thin-skinned potatoes, scrubbed
  • 1 lb. shallots
  • 1 T. olive oil
  • 1 prime rib roast, bone in (around 8 lbs.)
  • 2 T. freshly ground pepper
  • 1 T. grated lemon peel
  • 2 tsp. Dried thyme
  • 1/2 tsp. salt
  • 3 cloves garlic, peeled and minced
  • 1 T. parsley, chopped
Directions
  1. In a 12x17 inch roasting pan, mix potatoes and shallots with a coating of olive oil. Arrange vegetables around the edge of the pan and place a rack in the center. Rinse the beef and pat dry, trim fat to 1/4 inch thick if necessary.
  2. In a small bowl mix pepper, lemon peel, thyme, salt, and garlic. Rub over the beef and set roast, fat side up in the pan.
  3. Cook at 325 degrees and until meat thermometer read 135 degrees (medium-rare). This will take about 2 hours and 15 minutes. For medium well the temperature will have to reach 145 degrees.
  4. Transfer roast to platter when finished cooking and spoon vegetables around it. Tent the platter with foil and let rest for 5-10 minutes.
  5. Sprinkle vegetables with parsley and serve.
