Lemon-Sage Marinated Veal Chops

Ingredients
  • 1 tablespoon finely grated lemon zest
  • 1/4 cup fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons finely chopped fresh sage
  • 2 tablespoons minced shallot
  • 2 tablespoons whole grain mustard
  • 1 tablespoon finely chopped garlic
  • 1 tablespoon freshly cracked black peppercorns
  • 4 veal rib chops (with bone), 8-10 ounces each
  • 1 tablespoon salt
  • lemon slices
  • fresh sage leaves, optional
Directions
  1. In a large resealable plastic bag combine the ingredients, press out air, and turn several times.
  2. Refrigerate for 8 to 12 hours turning occasionally
  3. Remove chops from the bag, season with salt and let sit for 20-30 minutes at room temp.
  4. Sear chops over direct high heat with lid closed, until desired doneness
  5. Garnish with fresh sage leaves and lemon slices.
Makes 4 servings
