Korean Style Steak

Ingredients

  • 1/2 cup raw (turbinado) sugar
  • 1 cup soy sauce
  • 1 T. Sriracha (hot) sauce
  • 2 T. dark sesame oil
  • 2 filet mignon steaks
  • Coarse salt and freshly ground pepper to taste
  • 2 T. extra-virgin olive oil

Directions

  1. Pre-heat oven to 375 degrees
  2. Combine the sugar, soy sauce, hot sauce, and sesame oil in a small saucepan. Simmer for a few minutes, until all the sugar has dissolved.
  3. Season both sides of the filet with the salt and pepper.
  4. In a heavy, oven proof skillet, heat olive oil until almost smoking. Place steaks in pan and sear for about 3 minutes until a good crust has formed.
  5. Turn over steaks so crust is on top and put the pan in the oven; roast for 10-12 minutes for medium-rare. If you want medium, add 4 more minutes.
  6. With a minute to go left in cooking, brush your filets with the glaze.
  7. When steaks have finished cooking, brush again with glaze mixture. Put steaks on a platter, cover with foil and let rest for 5 minutes.
