Grilled Rack of Lamb

Although Rack of Lamb is an elegant dish, it is really quite easy to prepare - especially on the grill.

  1. Trim any additional or loose pieces of fat off the bones on the rack. This is called "Frenching."
  2. Lightly season with salt and pepper.
  3. Place the lamb rack on a HOT pre-heated grill.
  4. Sear each side for 2 minutes. This will create a fantastic crust on your rack of lamb.
  5. Move the rack to an area of indirect heat and grill on each side for 10-15 minutes, depending on your preference of temperature.
  6. Keep a meat thermometer handy, medium rare rack of lamb has an internal temperature of around 135 degrees.
  7. Once the rack has reached your desired temperature, remove and let rest for 10-20 minutes.
  8. Remember: Like any roast, Rack of Lamb will continue cooking after you take it off the flame. Avoid overcooking by removing from heat before it has reached your desired temperature.
