Grilled Pork Chops and Summer Squash

Ingredients

  • 4 pork chops
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1 8 oz. can tomato sauce
  • 1/3 cup water
  • 1/3 cup onion, finely chopped
  • 1/4 cup ketchup
  • 1/3 teaspoon hot pepper sauce
  • 1 tablespoon sugar
  • 1 tablespoon vinegar
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 4 summer squash, medium, sliced lengthwise

Directions

  1. Lightly sprinkle pork chops with salt.
  2. Grill pork chops over medium coals for 35 minutes, turning once.
  3. While waiting for pork chops to grill, prepare barbeque sauce.
  4. In small saucepan, combine tomato sauce, water, onion, ketchup, hot sauce, sugar, vinegar, Worcestershire sauce, and salt.
  5. Bring sauce to a boil; reduce heat and simmer uncovered for 15 minutes.
  6. Generously brush pork chops with sauce and grill an additional 5 minutes.
  7. Turn and brush other side of pork chops and grill 5 minutes.
  8. Brush summer squash slices lightly with olive oil and add to the grill, keeping chops warm while grilling squash.
  9. Serve chops warm with grilled summer squash.
