Grilled Lobster Tail with Citrus Melt

Ingredients

  • 6 Frozen Lobster Tails, about 6 to 8 ounces each, butterflied
  • 6 lemon wedges
  • 3 teaspoons fresh lemon juice
  • 3/4 teaspoon grated orange peel
  • 3/8 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 3/8 cup melted butter
  • 1/2 teaspoon dash paprika

Directions:

  1. Using a broiler pan, place lobster tails shell side down.
  2. In a small mixing bowl, combine lemon juice, orange peel, salt, ginger, butter and paprika and mix until blended.
  3. Brush mixture evenly over lobster tails and broil 7 to 10 minutes, making sure not to burn.
  4. Meat should flake easily.
  5. Slightly loosen meat from lobster shell and serve with lemon wedges.

Makes 4 servings
