Grilled Lamb Chops con Salsa de Peach Papaya Recipe - Heartland

Ingredients

Salsa

  • 2 cup ripe peaches, chopped
  • 4 cups ripe papayas, chopped
  • 2 tablespoon red onion chopped
  • 3 tablespoons fresh cilantro, chopped
  • 2 tablespoon lemon juice
  • 1/2 teaspoon salt

Directions

  1. Be sure to trim all fat from lamb chops.
  2. Lightly coat the grill with cooking spray and allow to preheat for 5 minutes.
  3. Season chops with salt and pepper and place on grill for approximately 4-6 minutes or until brown on both sides.
  4. In a large bowl, mix together the peaches, papaya, onion, cilantro, lemon juice and 1/2 teaspoon salt. Be sure to chop the fruit into small pieces.
  5. When serving, place one lamb chop on each plate and spoon salsa on top of chops. Serve warm.
