Grilled Chicken Caesar Salad

Ingredients

  • 1 lb. boneless, skinless chicken breasts
  • 1 tsp. canola oil
  • ¼ tsp. salt, or to taste
  • Freshly ground black pepper to taste
  • 8 cups washed, dried and torn romaine lettuce
  • 1 cup croutons
  • ½ cup Caesar salad dressing
  • ½ cup Parmesan curls
  • Lemon wedges

Directions

  • Preheat grill or broiler
  • Rub chicken with oil and season with salt and pepper
  • Grill or broil chicken until no pink remains in the middle; about 4 minutes per side.
  • Combine lettuce and croutons in a large bowl and toss with salad dressing.
  • Divide among four plates; cut chicken into slices and fan over salad.
  • Top with Parmesan curls (take a piece of 4 oz cheese and use a swivel bladed vegetable peeler to get curls); serve immediately with lemon wedges.

For the long way Homemade Caesar Dressing:

Ingredients

  • 1 clove garlic, smashed with pinch of salt and a bit of olive oil
  • 4 anchovy fillets
  • 2 egg yolks
  • 1 T. Dijon mustard
  • 2 lemons, juiced
  • 2 T. water
  • ½ cup extra virgin-olive oil
  • ¼ cup freshly grated Parmesan, and extra for garnish
  • Freshly ground black pepper

Directions

  • Smear garlic over inside of the salad bowl
  • Put the anchovies, egg yolks, mustard, lemon juice and water into a blender and mix for about 30 seconds until smooth,
  • With blender running, add olive oil slowly.
  • Stir in the Parmesan, a pinch of salt, and a couple pinches of pepper.
  • Set aside and refrigerate if not using right away.
