- 4 boneless Certified Angus Beef® sirloin steaks, cubed
- 1/4 cup extra virgin olive oil
- 2 fresh green peppers
- 2 fresh red peppers
- 2 fresh orange peppers
- 2 large onions
- 1 yellow squash, sliced
- 1 small eggplant, sliced
- 1 tablespoon salt
- 1 teaspoon pepper
- 1/4 cup Cajun seasoning
Directions
- Preheat grill to medium-high heat.
- Slice green pepper, red pepper, orange pepper, and onion into 1 inch by 1 inch squares and slice squash and eggplant into 1/2 inch thick slices. Place vegetables in separate bowls for easy skewing.
- Skew steak and vegetables on metal or wooden skewers in the following order: steak, green pepper, onion, red pepper, yellow squash, orange pepper, eggplant.
- Repeat until skewer is full, leaving room at both ends for turning while grilling.
- Repeat until all meat and vegetables are skewed.
- Lightly brush olive oil over all skewers to prevent sticking while grilling.
- Lightly season with salt and pepper.
- Season steak and vegetables with Cajun seasoning as desired.
- Place on grill over medium-high heat, turning frequently to avoid charring.
- Grill approximately 10 minutes or until desired doneness. Vegetables should still be crispy when done.
Note: If using wooden skewers, we recommend soaking them in water for at least 30 minutes before skewing. This helps prevent the ends from burning while grilling over hot flames, making it easier to turn the skewers.
