Garlic Herb Crusted Chateaubriand

Ingredients

  • 4 lb. Chateaubriand
  • 6 garlic cloves
  • 12 fresh sage leaves
  • 6 tsp. salt
  • 2 ½ tsp. ground black pepper
  • 6 tsp. fresh thyme leaves
  • 6 tsp. olive oil

Instructions

  1. Using a food processor, combine garlic, sage, thyme, oil, salt, and pepper and chop until paste forms.
  2. Dry meat using paper or clean cloth towels.
  3. Rub meat with herb paste, cover, and keep refrigerated for at least 3 to 4 hours.
  4. Preheat oven to 450 degrees.
  5. Place meat in roasting pan and place pan on oven rack.
  6. Roast meat 15 minutes and reduce oven temperature to 350 degrees F.
  7. Roast meat until instant read thermometer inserted into thickest part of meat registers 130 degrees F for medium rare (about 35 minutes). For medium, roast until thermometer registers 140 degrees F. (about 40 minutes).
  8. Remove from oven and let stand 20 minutes.
  9. Cut into 1 ½ inch thick pieces and arrange slices on a platter.

Makes 10 servings
