Filet Mignon with Goat Cheese & A Balsamic Reduction

Ingredients Directions
  1. Boil the vinegar and sugar in a small, heavy saucepan over medium-high heat until it is reduced to 1/3 of a cup. Stir it regularly; it will take around 18 minutes.
  2. Preheat broiler. Melt butter in a large, heavy skillet over medium-high heat,
  3. Season steaks with salt and pepper. Cook to desired doneness; around 3 minutes per side for medium rare.
  4. When steaks are cooked, place on a baking sheet. Crumble the cheese on top and broil until the cheese melts; around 1 minute.
  5. Sprinkle steaks with a bit of pepper and put on plates. Drizzle the sauce over and around steaks.

Makes 6 Servings
