Fiesta Fajita Recipe - Heartland Steaks

  • 2 - (8 oz.) Heartland Steaks Certified Angus Beef® Skirt Steaks
  • 4 Sliced Bell Peppers (use red, yellow and green for festive colors)
  • 1 Large Onion (quartered and sliced)
  • 2 Jalape?o Pepper* (chopped very fine)
  • Salt and Pepper
  • Soft Flour Tortilla Shells

Marinade:

  • 1 1/2 cups Extra Virgin Olive Oil
  • 1 large bunch of fresh Cilantro (chopped)
  • 1 tbsp Cumin
  • 1 tsp Onion Powder
  • Cayenne Pepper Powder
  • 2 oz of Tequila*

Directions

In a large bowl, combine the olive oil, onion powder, cumin and cilantro. Since everyone's tastes are different, add the cayenne pepper powder at your discretion.

Add the tequila and mix well.

Season your Heartland Steaks Skirt Steak with salt and pepper and add to the marinade along with the peppers, onion and jalapeno. Let marinade in the refrigerator overnight.

Fire up the grill to high heat. Put the steaks on and cook to medium (link to hand test page) (About four minutes on each side) remove from the grill and let rest for about five minutes before cutting.

Sautee the Peppers, onions and jalapenos in a tbsp of Extra Virgin Olive oil until tender.

Serve on a large platter. Enjoy!
