Fajita Quesadillas

  • 2 8oz. Certified Angus Beef® Skirt Steaks (cut into strips)
  • 1 tablespoon (15 ml) fajita seasoning blend
  • 1 teaspoon (5 ml) olive oil
  • 3 tablespoons (45 ml) red enchilada sauce
  • 3 tablespoons (45 ml) diced green chilies
  • 1 Poblano pepper, seeded and cut into thin strips
  • 1 cup (250 ml) yellow onion, cut into strips
  • 1 tablespoon (30 ml) chopped fresh cilantro
  • 6 ounces (180 g) feta cheese
  • 4 (10-inch or 25 cm) flour tortillas
  • Salsa and sour cream, optional

Directions

  1. Preheat grill on high; reduce to medium. Cut skirt steaks into strips. Combine skirt steaks , seasoning, oil, enchilada sauce, chilies, pepper, onion and cilantro. Place in foil pouch and cook on grill 30 to 35 minutes.
  2. When fajita mixture is done, heat tortillas on grill and top with feta cheese. Equally divide fajita mixture between tortillas; fold in half, cut into four pieces each and serve with salsa and sour cream.

Makes 4 portions or serves 12 as an appetizer
