Exciting and Exotic Smoking Pork Chops

Ingredients

  • 8 Pork loin chops cut 1 1/2 inches thick
  • 12 to 16 cherry or pecan wood chunks
  • 4 to 6 tsp of Jamaican jerk seasoning
  • 2 Medium mangos, seeded, peeled, and finely chopped (Close to 2 Cups)
  • 1/2 Jamaican Jerk Seasoning
  • 4 tsp of orange juice
  • 1 tsp finely shredded orange peel
  • 4 tbsp fresh and snipped cilantro or parsley
  • 1/2 cup sliced green onions (4)
  • Fresh Parsley sprigs or fresh cilantro (Optional)

Directions

  1. Allow one hour before smoke cooking, and soak the chunks of wood in water that covers them. Make sure to drain before using.
  2. Carefully sprinkle the 4 to 6 tsp, evenly over the pork chops and rub with your fingers (Make sure to trim fat from pork chops before starting this process)
  3. Within a smoker arrange the drained chunks of wood, preheated coals, and water pan according to the appropriate manufacturer’s directions. Pour the water into a pan, and place pork chops on the grill rack over the water pan. Cover and smoke for 3.5 to 4.5 hours or until juices run clear (160F). Add any additional coals and/or water as needed to keep moist and maintain temperature.
  4. Using a medium bowl stir together green onions, cilantro, orange peel, mango, orange juice, and the jerk seasoning. Allow sauce to stand at room temperature for 30 to 40 minutes so it can fully blend the flavors.
  5. Pour sauce over pork chops, and add cilantro sprigs garnish if desired.

Makes 8 servings
