Easy Grilled Skirt Steak

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup soy sauce
  • 2 T. lemon juice
  • 1 T. minced garlic in olive oil
  • 2 tsp. dried thyme
  • 1 (1 1/2-2 lb) skirt steak

Directions

  1. Mix together the oil, soy sauce, lemon juice, garlic, and thyme in a large Ziploc bag. Add the steak and coat all sides.
  2. Close bag and marinate in the fridge for 30 minutes to 3 hours.
  3. Preheat grill to medium heat and oil grill grates.
  4. After meat has marinated, take out meat and throw away the rest of the marinade.
  5. Grill steak uncovered, around 17-20 minutes for medium rare or medium. Turn once.
  6. Take steak off grill, cover with foil, and let rest for 15 minutes. Slice the steak in thin slices across the grain.
