Citrusy Steak Salad

Ingredients

  • 4 strip steaks (4-6 oz each)
  • Coarse salt and fresh ground pepper to taste
  • 2 navel oranges, peel and pith removed
  • 2 T. vegetable oil
  • 2 T. honey
  • 1 tsp. finely grated peeled fresh ginger
  • 1 head of romaine lettuce, cored and cut into bite size pieces
  • 1 small red onion, halved and sliced thinly
  • 4 carrots, cut into matchsticks

Directions

  1. Heat a large skillet to medium. Season steaks with salt and pepper and add to the pan.
  2. Cook, turning only once, for about 8 minutes (medium rare).
  3. Place on a cutting board and let rest 5 minutes. Thinly slice crosswise and set aside.
  4. Cut oranges to release segments and set aside. Over a medium bowl, squeeze the remaining membranes to release around 2 T. of juice. Whisk in oil, honey, and ginger into the bowl.
  5. Season with salt and pepper. Add lettuce, onion, carrots, and orange segments. Toss and top salad with the steak.
