Chili-Rubbed Rib Eye with Salad

Ingredients
  • 1/2 tsp. chili powder
  • 1/2 tsp. ground coriander
  • 1 tsp. Dijon mustard
  • 3 tsp. olive oil
  • 1 T. red wine vinegar
  • 1 (8oz) rib eye steak
  • 5 cups leaf lettuce
  • 4 large radishes, thinly sliced
  • 1/2 small red onion, halved and thinly sliced (1/3 cup)
  • Coarse salt and ground pepper to taste
Directions
  1. Make the salad dressing in a medium bowl by combining 1/4 tsp of the chili powder, 1/4 tsp. coriander. Mustard, 2 tsp. olive oil, and vinegar. Season with salt and pepper and set aside.
  2. Rub meat with the rest of the chili powder and coriander, then season with salt and pepper.
  3. In a small skillet, heat the rest of the oil over medium-high and cook steak,
  4. Cook about 4 minutes for medium-rare and turn once half way through.
  5. Add lettuce, radishes, and onion to bowl with the dressing and toss. Place salad on a dinner plate and put the steak on top.
