Chicken Salad in a Pita

Ingredients

  • 3 stalks of celery, 1 chopped coarsely and the other 2 thinly sliced
  • 1 medium sweet yellow onion, coarsely chopped
  • 1 carrot, coarsely chopped
  • 2 sprigs fresh thyme
  • 1.5 tsp. fresh salt and more for seasoning
  • 2 boneless, skinless chicken breasts (should be around 12 oz)
  • 1/3 cup of mayonnaise
  • 1 T. fresh lemon juice
  • 1 tsp. Dijon mustard
  • Fresh ground pepper
  • 1/2 cup slivered almonds, toasted
  • 1 cup canned mandarin orange pieces
  • 8 (6-8 inch) pita breads
  • 8 lettuce leaves

Directions

  1. Mix 2 cups water, chopped celery, onion, carrot, thyme, and salt into a medium sauce pan and bring to a boil.
  2. Reduce heat to simmer and add chicken. Cover and simmer until cooked through. Around 15 minutes.
  3. Put chicken in a bowl and let cool. Shred and discard pan contents.
  4. Stir mayo, lemon juice, and mustard in a medium bowl. Season to taste with salt and pepper. Stir in the chicken, sliced celery, and almonds. Fold in the orange pieces.
  5. Cut off top inch of pita to open the pocket and fill with 1 lettuce leaf and 1/2 cup of the chicken salad.
