Broiled Lamb Chops with Balsamic Vinegar Reduction

Ingredients

  • 2 lbs. of rack of lamb cut into chops (2-3 per person)
  • Salt and pepper to taste
  • 1 ½ cups of balsamic vinegar
  • 3 T. brown sugar
  • 3 sprigs of fresh rosemary, finely chopped
  • 2 cloves of fresh garlic, crushed and peeled

Directions

  1. Preheat the broiler and arrange the lamb chops on a pan.
  2. Mix together the vinegar, sugar, rosemary and garlic in a small pan. Bring ingredients to a boil and reduce the heat to low.
  3. Simmer the sauce for 10 minutes to thicken and then remove the garlic.
  4. For medium rare lamb chops, broil for 5 minutes per side. Season lamb chops to taste with the salt and pepper.
  5. Set them on a warmed serving dish and drizzle with the balsamic vinegar reduction. Serve immediately.

Serves 4-5
