Brandy Grilled Prime Rib Roast

Ingredients

  • 8 pound rib roast
  • 1 1/2 cup Brandy
  • 6 cloves garlic, finely wedged
  • 1/2 cup Soy sauce
  • 1 tablespoon pepper, freshly ground
  • 1 tablespoon salt

Instructions

  1. Preheat oven to 350F.
  2. Using a sharp knife, carve 1 inch deep slits over entire surface of roast and insert garlic wedges.
  3. Place roast in roasting pan and brush outside of roast with soy sauce.
  4. Sprinkle roast with salt and pepper and let roast sit at room temperature for one hour to absorb flavorings.
  5. Cook at 350 degrees until desired doneness. Note: Use a thermometer to determine the doneness of the roast as to not overcook or undercook the beef. Medium rare roasts should read 125 degrees on the meat thermometer. Medium roasts should read around 135 degrees.
  6. Baste roast every 10 minutes with brandy while cooking.
  7. When done, transfer to a warm plate and let sit 10 minutes before carving. Skim fat from roasting pan and discard.
  8. Carve and serve with your favorite side dishes.
  9. Makes 6 servings
