Boneless Pork Chops with Apples and Cranberries

Ingredients

  • 4-6 boneless pork chops
  • Salt and pepper to taste
  • 1/4 cup flour
  • 2 T. unsalted butter
  • 1 T. olive oil
  • 1 large onion, halved and sliced
  • 2 cups gala apples, chopped
  • 1 T. lemon juice
  • 1/2 cup apple cider or apple juice
  • 3 T. brown sugar
  • 1/4 tsp. cinnamon
  • A pinch of allspice
  • 1/3 cup dried cranberries

Directions

  1. Heat butter in a large skillet over medium heat. Add onions and sauté until lightly browned. Set the onions aside. Put olive oil in pan.
  2. Season the pork chops with salt and pepper and cover with the flour. Cook the pork for a couple minutes on each side until slightly brown.
  3. While the pork is cooking, combine the apples, lemon juice, cider, brown sugar, and spices in a medium sized bowl.
  4. Place apple mixture in the skillet on top of the pork and add the onions.
  5. Simmer ingredients, for around 5 minutes uncovered. Then cover, and simmer for 20 minutes.
  6. Stir in cranberries and cook for a couple minutes.

Makes 4 servings
