Blackberry Sauce

*Goes perfect with Filet Mignon

Ingredients
  • 1/4 cup finely chopped shallots
  • 1/2 cup dry red wine (Cabernet)
  • 1 cup low sodium beef broth
  • 3 T. blackberry preserves
  • 2 T. unsalted butter
  • Salt and freshly ground black pepper
Directions
  1. If you cooked beef in a skillet you can use the same skillet to make sauce; if not, sauté the shallots in a skillet for one minute.
  2. Add red wine and scrape up any food bits on the bottom. Boil the wine until it’s reduced by half.
  3. Add broth and blackberry preserves to the skillet, bring up to a boil, and reduce mixture by half. Sauce should coat the back of a spoon.
  4. Whisk in 2 T. of butter and season with salt and pepper to taste.
  5. Serve by drizzling over steaks.
