Black Pepper Bean Sauce over Grilled Garlic Rib Eye Steak

Steak Ingredients

  • 4 rib eye steaks
  • 2 teaspoon fresh ginger, minced
  • 3 tablespoon brandy
  • 4 teaspoons salt
  • 1 1/2 teaspoon garlic, minced
  • 3 teaspoon sugar
  • 2 teaspoon five-spice powder
  • 14 asparagus stems

Pepper and Black Bean Sauce Ingredients

  • 5 teaspoons sugar
  • 3 cups chicken stock
  • 1 1/2 teaspoon canola oil
  • 2 teaspoons oyster sauce
  • 1/4 teaspoon sesame oil
  • 3 teaspoons garlic, minced
  • 1 1/2 teaspoon coarsely ground pepper
  • 2 green onions, chopped
  • 2 teaspoon ginger, minced
  • 2 teaspoons equal part of corn starch and water
  • 11 teaspoons salted black beans, mashed

Directions

  1. Pour brandy over steak, marinating for 5 minutes. Repeat for both sides.
  2. Mix together salt, sugar, five-spice powder, garlic and ginger.
  3. Rub steak with mixture and marinate for at least 4 hours.
  4. Grill the steak on medium high heat until approximately 6 minutes on each side, or until desired doneness.
  5. While grilling, blanch asparagus in water for 2 to 3 minutes.
  6. Drain and place on serving patter.
  7. In a wok or sauté pan, heat oil over medium heat.
  8. Combine garlic and ginger in wok and mix together with oil.
  9. Stir until well blended and add mashed salted black beans.
  10. Cook for approximately 3 minutes and add sugar and ground pepper.
  11. Let cook for approximately 2 minutes and add oyster sauce and chicken broth.
  12. Mix thoroughly and heat until simmering.
  13. Slowly add the corn starch water to thicken sauce.
  14. After steak is cooked to desired doneness, slice in ½ inch thick pieces.
  15. Place steak slices over asparagus.
  16. Pour half the sauce over the steak and garnish with chopped green onions.
  17. The remainder of the sauce can be put in a separate bowl and served with the meal.
