Beef with Ginger and Kale

Ingredients
  • 1 pound filet mignon, thinly sliced
  • 2 T. finely grated fresh ginger
  • 4 garlic cloves, minced
  • 1 medium onion, grated on the small side of a grater
  • 1/4 tsp. smoke paprika
  • 2 small dried hot red chiles, crumbled
  • 1/4 tsp. coarse salt
  • 1 tsp/ extra-virgin olive oil
  • 1 bunch of kale, stems removed and leaves cut; rinse very well
  • 1/2 cup low-sodium beef stock
  • 1/2 tsp. fresh ground pepper
Directions
  1. Combine beef, ginger, garlic, onion, paprika, chiles, and salt in a bowl. Toss to make sure beef is coated well.
  2. Heat the oil in a large sauté pan over medium-high heat. Add beef mixture and cook while stirring regularly. Stir until lightly browned for about 3 minutes.
  3. Stir in kale, cover, and reduce heat to medium low. Stir occasionally and cook for about 5-7 minutes, or until leaves are tender.
  4. Uncover and raise heat to medium-high. Add stock and stir and scrape bottom of the pan for one minute. Season with pepper.
