Baked Lobster with a Champagne Butter Sauce

Ingredients
  • 4 Heartland Steaks frozen lobster tails
  • 2 T. minced shallots
  • 1 cup champagne
  • 1 lb. cold butter cut into 2 inch cubes
  • 3 T. olive oil
Directions
  1. Thaw lobsters in fridge; once thawed preheat oven to 400 degrees.
  2. Place lobsters in a 13x9 inch pan meat side up. Pour about 1/2 inch of water into pan and drizzle olive oil over the lobster tails.
  3. Place lobsters in oven and bake for about 10 minutes or until middle is no longer opaque.
  4. For the sauce, combine shallots and champagne in a saucepan and reduce mixture to a glaze.
  5. Add butter slowly and whisk constantly. Sauce will begin to thicken.
  6. Strain into a clean saute pan and season with salt and pepper. Keep sauce warm.
  7. Remove tails and place on a platter. Serve with sauce
