Recipe of the Month

"This recipe will make your mouth sizzle!"
~Justin Underley, Orlando, FL
Ingredients
- 1 pound filet mignon, thinly sliced
- 2 T. finely grated fresh ginger
- 4 garlic cloves, minced
- 1 medium onion, grated on the small side of a grater
- 1/4 tsp. smoke paprika
- 2 small dried hot red chiles, crumbled
- 1/4 tsp. coarse salt
- 1 tsp/ extra-virgin olive oil
- 1 bunch of kale, stems removed and leaves cut; rinse very well
- 1/2 cup low-sodium beef stock
- 1/2 tsp. fresh ground pepper
Directions
- Combine beef, ginger, garlic, onion, paprika, chiles, and salt in a bowl. Toss to make sure beef is coated well.
- Heat the oil in a large saute pan over medium-high heat. Add beef mixture and cook while stirring regularly. Stir until lightly browned for about 3 minutes.
- Stir in kale, cover, and reduce heat to medium low. Stir occasionally and cook for about 5-7 minutes, or until leaves are tender.
- Uncover and raise heat to medium-high. Add stock and stir and scrape bottom of the pan for one minute. Season with pepper.
