Recipe of the Month

"This is just a wonderful recipe you will all love"

Ingredients
- 1 bone-in prime rib roast, around 7 lbs.
- 8 cloves of garlic, thinly sliced
- Salt and coarsely ground pepper to taste
- 2 cups red wine
- 4 cups beef stock
- 1 T. chopped fresh thyme leaves
Directions
- A half hour before roasting, take roast out of fridge and let it come to room temperature. Preheat the oven to 350 degrees.
- Slice small slits all over the prime rib and fill each one with a garlic slice. Season with salt and pepper.
- Place meat on a rack inside a roasting pan and roast for about 2 hours for medium-rare. Meat thermometer should read 135 degrees. Take meat out and set on platter; cover with foil.
- Place the roasting pan on top of the stove over two burners that are set to high.
- Add wine and cook on high until liquid is reduced; scrape the bottom of pan with a wooden spoon.
- Add stock and cook until reduced by half; then whisk in the thyme and season with salt and pepper.
- Slice meat and serve with sauce
