Recipe of the Month

Spicy Sirloin Quesadillas
"This is my new favorite recipe, and my wife loves it too!"
~Erich Shrewsbury, San Francisco, CA
Ingredients
- 4, 12 inch, flour tortillas
- 3/4 cup grated cheddar cheese
- 8 oz. sirloin steak, grilled to desired doneness and sliced thinly
- 1-2 T. minced jalapeno
- 1/4 cup salsa, add more for serving
- Vegetable oil
- Fresh cilantro sprigs for garnish
Directions
- Place two of the tortillas on a flat surface, and spread 1/2 cup of the cheddar evenly over them.
- Divide the steak in equal amounts for each tortilla and sprinkle jalapeno over tortillas.
- Add salsa to each tortilla and then add the remaining amount of cheese. Place the remaining tortillas on top of each on and press down.
- Heat a large saute pan to high heat and add enough vegetable oil to coat pan; lower heat to medium.
- Cook each side until it is golden brown, around three minutes. Let cool for five minutes.
- Slice into 8-10 pieces and serve with salsa and cilantro.
